Maple syrup is graded according to CFIA (Canadian Food Inspection Agency) standards by colour. At the beginning of the maple season the first syrup that is produced is generally lighter in colour and has a more delicate flavour, whilst as the season progresses the syrup starts to turn darker with a stronger flavour. As such maple syrup is graded as either –

To produce this product the sap has simply been boiled to concentrate the sugar content.
