Using Maple Syrup To Replace White Sugar

Pure maple syrup is recognized as a healthier option than most other refined and processed sugars and sweeteners. Maple syrup is relatively unprocessed and pure Canadian maple syrup is made 100% natural sap produced from sugar maple trees. The only processing to take place is when the maple sap is boiled down to concentrate its sugar content to around 66% from 2% in its natural state. As a comparison sugar (made from sugar cane or sugar beets), is processed intensively in factories. In order to produce white granulated sugar the sugar cane or sugar beets are boiled and mashed to draw the liquids out, after-which different chemicals are added at each stage of the process. Some of these chemicals include lime, diatomaceous earth and phosphoric acid. The juices are then filtered and bleached using bone char, carbon, and sometimes through an ion exchange. In comparison Maple syrup contains 54 individual compounds including manganese, calcium, Vitamin B2, Niacin, zinc, with some compounds found specifically in maple syrup alone.

Maple syrup also has less calories than processed sugar and has a lower glycemic count which means its less of a shock for the body.

Guide to Replacing Sugar 

To substitute sugar for maple syrup (depending on what you are using it for general cooking or baking) we have prepared a quick guide below.

To bake with maple syrup your need to substitute every 1 cup of white sugar with 3/4 of a cup of maple syrup.

Maple syrup is also more liquid than most other sweeteners so you will also have to adjust the liquid in the recipe by around 3 tablespoons for every 1 cup of maple syrup used. You should also remember that maple will brown and caramelise quicker causing your baked goods to brown.

To replace honey and molasses.

To replace honey in a recipe and substitute it with maple syrup use 3/4 of a cup of maple syrup and combine this with 1/2 a cup of white sugar for each cup of honey. When replacing molasses use 1 cup of maple syrup for every 1 cup of molasses.

Always Use Real Maple Syrup
