Darker Colour, Stronger Taste Maple syrup is produced within a very short period of the year in spring when the maple trees come back to life after being dormant through the winter period. At the start of the season the sap that is produced from the sugar maple trees is boiled to produce a lighter coloured syrup whilst later on through the season as it draws to a close the syrup becomes darker in colour.
